The version shown in "Under Edit Settings | Options | Guest Operating System" is the one you configured either while creating the VM or later. The one shown in the summary is what VMware detects, i.e. what's reported by VMware Tools. Although the detection usually works well, it sometimes doesn't return the proper information (maybe due to an old Tools version in the guest OS!?).
