With 8 NIC's I would do something like this.
standard virtual switch 2 nics
Mgmt active/standby
vMotion Standby/active
your fun starts with the splitting of the remaining 6 nics
depending on production traffic (assuming low to average)
distributed virtual switch
2 x NICs for production traffic
4 times NICs for NFS Storage.
