Why are you using a 1 GB NIC for VM use? I would configure as follows:
The 2 1 GB NICs for management and vMotion condigure so that 1 NIC is active for management and failover for vMOtion and 1 is active for vMotion and failover for management.
The 2 10 GB to be shared by iSCSI and VM traffic - either in a similar configuration or using one of the vailable load balancing polisies.
