Physical network connectivity to esxi hosts

I need explanation on how to set up the vSwitches with the physical switches both hp procurve's and cisco.

connected all nic ports within the hosts to the ports on the cisco switch.

I was told to create 3 vmkernel ports for storage, vmotion and management which I have done and they all are in a different subnet like 192.168.1.0, 10.10.1.0 and 10.20.1.0.

The virtual machines are on a different subnet 10.30.1.0 and they have vlans 10, 20, 30, 40 on the switch configured.

I was under the impression that to all hosts i will need a single trunked port configured on the switch side.

On the vSwitch side I just need to ensure that the vmnic that is connected to the vSwitch is the cable that is the trunked cable coming from the switch and everything should work.

What happened is another tech created a vmkernel port on each esx host and tagged the vlan on it and all traffic started flowing through? how was that possible.

Why is that no training videos or guides show how the physical side communicates to the vSwitch? please help and answer
